При этом в литературных источниках мало информации об их сопоставимой по количественным и качественным показателям пригодности к переработке на хрустящий картофель. Особенно при выращивании в одинаковых условиях. Цель исследований – определить новые отечественные сорта картофеля, отличающиеся высокой урожайностью, товарностью, выходом здоровых клубней и пригодностью к переработке на хрустящий картофель; выявить факторы, влияющие на количественные и качественные показатели сырья. Исследования проводили в условиях Московской области в 2022–2024 гг. Картофель выращивали на среднеобеспеченной питательными элементами дерново-подзолистой супесчаной почве. В двухфакторном опыте изучали товарную урожайность картофеля с учётом процента выхода здоровых клубней и качество хрустящего картофеля. Факторы: А – сорт картофеля (58 шт.); Б – количество осадков во второй половине вегетации (3 градации – 57,5 мм в 2022 г.; 83,4 мм в 2024 г.; 135,2 мм в 2023 г.). Посадку картофеля проводили в I декаде мая, уборку – в I декаде сентября, густота посадки 45 тыс. клубней/га, ширина междурядий 75 см. Обжаривание ломтиков картофеля толщиной 1,2 мм проводили при температуре 170–180 ºС. Установлено, что количественный выход сырья, пригодного для переработки на хрустящий картофель, определялся главным образом величиной осадков во второй половине вегетации (влияние фактора по результатам дисперсионного анализа 56,3 %), а качество сырья – сортом (59,1 %). Из 58 изученных выделены и рекомендованы в производство 13 сортов картофеля, сочетающих высокие показатели урожайности (28,8–37,7 т/га), товарности (52,0–79,7 %), выхода здоровых клубней (95,5–99,6 %), содержания крахмала (14,3–19,3 %), индекса редуцирующих сахаров (2,0–3,2) и тем самым отличающихся высокой пригодностью к переработке на хрустящий картофель (6,0–8,3 балла): Александрит, Ариэль, Шах, Орлан, Розовый чародей, Ника, Евпатий, Кавалер, Каштак, Печорский, Принцесса Натаван, Спиридон, Чайка.</p></abstract><trans-abstract xml:lang="en"><p>The State Register of Breeding Achievements of Russia has added dozens of new potato cultivars over the period of 2015-2025. However, there is little information in the literature about their comparable quantitative and qualitative suitability for processing into chips. Especially when grown in the similar conditions. The aim of the study was to identify new domestic potato cultivars that are distinguished by high yield, marketability, yield of healthy tubers and suitability for processing into chips; identify factors influencing the quantitative and qualitative indicators of raw materials. The research was carried out in the Moscow Region in 2022–2024. Potatoes were grown on sod-podzolic sandy loam soil that was moderately rich in nutrients. In a two-factor experiment, the commercial yield of potatoes was studied taking into account the output of healthy tubers and the quality of chips. Factors: A – potato cultivar (58 pcs.); B – amount of precipitation in the 2nd half of the growing season (3 gradations – 57.5 mm in 2022, 83.4 mm in 2024, 135.2 mm in 2023). Potatoes were planted in the first decade of May, harvested in the first decade of September, planting density was 45 thousand tubers/ha, row spacing – 75 cm. Frying of potato slices 1.2 mm thick was carried out at a temperature of 170–180 ºС. It was found that the quantitative yield of raw material suitable for processing into chips was determined mainly by the amount of precipitation in the 2nd half of the growing season (the influence of the factor according to the results of the dispersion analysis was 56.3 %), and the quality of raw material was determined by the cultivar (59.1 %).
